Here’s a quickie for you – cinnamon and apple soda breads, you can have them on the plate in less than half an hour.
Soda bread goes stale quite quickly so plan on eating them as soon as they’re done or warm them again and have them the day after.
Once again I did everything by eye. Once you add the liquid the baking soda will start to react so work quickly.
Neat tip for the buttermilk- if you fill the unwashed carton back up with skimmed milk and leave it somewhere warm, you’ll get more cultured buttermilk.
Cultured buttermilk 140g or you could use yoghurt
Plain flour 236g
Whole meal flour – I used spelt – 90g
Dried apple 55g
Baking soda 12g NOT baking powder!
Cinnamon two sticks – grind ( add a pinch of sugar to the mortar to make grinding easier)
Rub flour and butter, add chopped apple, cinnamon
Mix honey and milk, stir into flour
Form into buns, cut a deep cross in the top
Bake 170c 18mins.
Serve with butter, coffee and hugs.
