Hello there. It’s that time of year when seasonal spicy buns are in the shops again ( actually they’ve been in the shops since bleedin’ January). I would never stoop to buying such things, have a fundamental problem with the usual decoration and have a load of whey to use up so here are my Not Cross Buns.

In my usual random baking style.
I added a few big handfuls of flour to whey, yeast and a bit of sugar to make a thick batter. I left it on the side for a good five hours to get good and frothy.
Rubbed another load of flour with a bit of butter, added handful of sugar and some spice ( vanilla, cloves, cinnamon and ginger) plus the zest of an orange and a pinch of salt.
You could bake the risen dough as one whole loaf but I’m a great believer in the joy of a good bun. If you find when you make buns that they come out oddly shapen, here’s the trick – cut off a piece of dough and on an oiled surface; cup your hand over the dough and roll your hand in a circular motion.
Decorating – I use flour and water paste for this, it needs to be done when they’re part baked so just whip them out of the oven as they’re just starting to brown. Paint on the mixture in a design of your choice and throw the buns back in for another five minutes.
To glaze I use honey (what else?) and put the buns back in the oven for a minute just to dry it a little.
